Preheat oven to 350°F. Line a large baking sheet with aluminum foil and place a wire rack on top.

Slice bacon strips in half to create 32 pieces. Wrap one piece of bacon around each club cracker, ensuring most of the cracker is covered without excessive overlap. Arrange each piece on the wire rack, spaced evenly.

Sprinkle about half a teaspoon of brown sugar over the bacon section of each cracker. Optionally, lightly season each piece with black pepper.

Bake in preheated oven for 20 to 25 minutes, monitoring after 20 minutes to prevent over-browning. Bacon should be crisp and sugar fully caramelized.

Remove tray from oven. Allow Bacon Crackers to cool on the rack for 5 minutes to let the coating set before serving warm or at room temperature.
