Set oven to 225°F and line a baking sheet with parchment paper or a silicone baking mat.

Using a mandoline slicer or a sharp knife, slice the apple into very thin, uniform slices approximately 1/16 inch thick.

Place apple slices in a single layer on the prepared baking sheet without overlapping.

Lightly coat apple slices with vegetable oil cooking spray and evenly sprinkle ground cinnamon over them.

Bake in the preheated oven for 1 hour, then flip slices and bake an additional 40 to 60 minutes until chips are crisp and dry.

Remove from oven and allow apple chips to cool completely on a wire rack to enhance crispness before serving or storing.
