Unroll thawed phyllo sheets and cover with a lightly damp towel to prevent drying.

Lay one phyllo sheet on a work surface and brush generously with melted butter. Repeat layering and buttering with remaining sheets, slightly angling each layer to build flakiness.

Place the Brie cheese wheel in the center of the layered phyllo. Drizzle 2 tablespoons honey over the Brie. Carefully fold and pleat phyllo edges around cheese to form a sealed parcel. Brush entire exterior with melted butter.

Transfer parcel seam-side up onto a parchment-lined baking sheet. Bake at 375°F (190°C) for 25 to 30 minutes until phyllo is crisp and golden brown.

Allow baked Brie to rest 5 to 10 minutes to set. Transfer to serving platter and drizzle with remaining 2 tablespoons honey before serving with crackers or fruit.
