# What You'll Need:

→ Slaw

01 - 2/3 cup mayonnaise or plain yogurt
02 - 1 tablespoon taco seasoning
03 - 2 tablespoons fresh lime juice
04 - 2 cups shredded green cabbage
05 - 1 cup shredded red cabbage
06 - 1 to 2 large carrots, shredded
07 - 3 to 4 green onions, chopped
08 - 1/2 cup fresh cilantro leaves

→ Fish

09 - 4 cod fillets, 6 ounces each
10 - 3 tablespoons olive oil
11 - 1 tablespoon taco seasoning

→ Salsa

12 - 1 tablespoon olive oil
13 - 1/2 red onion, diced
14 - 1/2 red bell pepper, seeded and finely diced
15 - 1/2 jalapeño pepper, seeded and finely diced
16 - 1 cup frozen corn kernels, thawed
17 - 1 (14.5-ounce) can black beans, rinsed and drained
18 - 1/2 fresh lime
19 - 2 green onions, sliced

→ For Serving

20 - 1 avocado, sliced or cubed
21 - Lime wedges
22 - Fresh cilantro sprigs

# Steps to Follow:

01 - Whisk together mayonnaise or yogurt, taco seasoning, and lime juice in a small bowl.
02 - Combine green and red cabbage, shredded carrots, green onions, and cilantro in a medium bowl. Add 1/4 cup of the dressing and toss to coat. Reserve remaining dressing for serving.
03 - Pat cod fillets dry with paper towels. Brush with olive oil and sprinkle evenly with taco seasoning on both sides.
04 - Heat 2 tablespoons of olive oil in a heavy skillet over medium-high heat. Place fillets seasoned side down and cook undisturbed for 4 minutes until they release easily from the pan. Flip and cook the other side for 3 to 4 minutes. Transfer to a plate and cover with foil.
05 - In the same skillet, heat 1 tablespoon olive oil. Sauté red onion, bell pepper, and jalapeño for 1 minute. Add corn, black beans, and taco seasoning; cook another 1 to 2 minutes. Remove from heat, squeeze lime juice over, add sliced green onions, and stir to combine.
06 - Divide slaw and salsa among four serving bowls. Top each with a cooked cod fillet and a quarter of the avocado. Garnish with lime wedges and cilantro sprigs before serving.
