# What You'll Need:

→ Soup Base

01 - 1 pound spicy Italian sausage, casings removed and crumbled
02 - 2 tablespoons olive oil
03 - 1 teaspoon Italian seasoning
04 - 0.5 teaspoon paprika, regular or smoked
05 - 2 tablespoons tomato paste
06 - 0.25 teaspoon red pepper flakes, plus extra to taste
07 - 6 cups water

08 - 2 medium sweet potatoes, peeled and cut into 0.5 inch cubes (about 2.5 cups)
09 - 3 cloves garlic, minced
10 - 5 ounces baby spinach (about 5 lightly packed cups)

11 - 10 ounces three-cheese tortellini, refrigerated or frozen
12 - 1 cup heavy cream

# Steps to Follow:

01 - Heat olive oil in a large stockpot over medium heat. Add crumbled Italian sausage. Sprinkle with Italian seasoning and paprika. Cook, stirring and breaking up the meat, for 6-8 minutes until sausage is browned and cooked through.
02 - Add sweet potatoes, minced garlic, tomato paste, and red pepper flakes to the pot. Stir well to combine, allowing the vegetables to coat in the sausage drippings for 2-3 minutes.
03 - Pour in the water. Bring to a simmer, cover with a lid, and cook over medium heat for 15 minutes until sweet potatoes are fork-tender.
04 - Add tortellini to the pot. Cover and cook for 10 minutes, stirring once or twice, until the tortellini are tender.
05 - Reduce heat to low. Stir spinach into the soup and cook uncovered for 1-2 minutes until leaves are wilted.
06 - Remove pot from heat. Stir in heavy cream thoroughly until soup is creamy and blended.
07 - Taste and season with salt as needed. Optionally, add extra red pepper flakes. Serve hot, topped with fresh thyme.
