Crockpot Green Beans (Printer-Friendly Version)

Slow-cooked green beans infused with smoky spices, lemon, and butter for a comforting side.

# What You'll Need:

→ Vegetables

01 - 1.5 lb green beans, trimmed and strings removed
02 - 1 lemon, zested and juiced (about 1 tablespoon lemon juice)
03 - 2 cloves garlic, minced

→ Liquids

04 - 0.5 cup vegetable broth
05 - 2 tablespoons unsalted butter

→ Seasonings

06 - 1 packet taco seasoning mix
07 - 1 teaspoon smoked paprika
08 - 0.5 teaspoon ground cumin
09 - 1 teaspoon onion powder
10 - 0.5 teaspoon freshly ground black pepper
11 - 2 teaspoons brown sugar

# Steps to Follow:

01 - Rinse green beans thoroughly, trim ends, and remove any tough strings.
02 - Place trimmed green beans into the slow cooker. Add vegetable broth, then sprinkle taco seasoning, smoked paprika, cumin, onion powder, black pepper, brown sugar, and minced garlic evenly over the beans. Add lemon zest and lemon juice.
03 - Dot the butter over the green beans, then toss thoroughly with tongs or clean hands to coat evenly with broth, butter, and seasonings.
04 - Cover and cook on LOW for 4 to 5 hours or on HIGH for 2 to 2.5 hours, until beans are tender but still retain firmness. Toss once or twice during cooking for even flavor distribution.
05 - Give the beans a final toss, adjust seasoning if needed, and serve hot garnished with reserved lemon zest for a fresh touch.

# Additional Tips:

01 - Use a slow cooker liner for easier cleanup. Avoid overcooking to maintain vibrant color and firm texture.
02 - For a vegan variation, substitute butter with 2 tablespoons extra virgin olive oil.
03 - Freshly zest the lemon just prior to use for optimal citrus fragrance.
