Crockpot Turkey Pumpkin Chili (Printer-Friendly Version)

# What You'll Need:

→ Proteins

01 - 1 pound ground turkey

→ Vegetables

02 - 1 medium onion, chopped
03 - 1 medium green bell pepper, diced
04 - 2 cloves garlic, minced

→ Canned Goods

05 - 14 oz can diced tomatoes, undrained
06 - 15 oz can pumpkin puree
07 - 1 can white beans, drained

→ Spices and Seasonings

08 - 1 ½ tablespoons chili powder
09 - 1 teaspoon black pepper, divided
10 - 1 teaspoon salt, divided

→ Liquids

11 - 1 tablespoon oil
12 - ¼ cup water

# Steps to Follow:

01 - Chop the onion, dice the green bell pepper, and mince the garlic cloves.
02 - Heat the oil in a skillet over medium heat and brown the ground turkey until fully cooked.
03 - Transfer the browned turkey to the crockpot. Add the chopped onion, diced bell pepper, minced garlic, diced tomatoes (with juice), pumpkin puree, drained white beans, chili powder, half of the salt and pepper, and water. Stir to combine.
04 - Cover and cook on low for 4 hours.
05 - Before serving, stir the chili and season with the remaining salt and pepper to taste.

01 - Using lean ground turkey keeps the chili lower in fat. For enhanced flavor, allow the chili to sit for 10 minutes after cooking before serving.
