In a large bowl, mix together pancake mix, eggs, honey, milk, and vegetable oil until just combined. Do not overmix; batter should remain slightly lumpy.

Fill each muffin cup about ¾ full with batter. Using a toothpick, gently press the desired add-in—such as strawberries, chocolate chips, peanut butter, banana, bacon, or blueberries—into each muffin.

Bake for 12 to 15 minutes, or until a toothpick inserted in the center comes out clean and tops are golden brown.
