Fold in diced ham, shredded cheddar, corn, herbs, green onions, and optional zucchini until evenly distributed.

Divide batter among muffin cups, filling each about ¾ full. Top with a pinch of cheddar, a few ham pieces, and chives if desired; press lightly.
