Harry Potter Pumpkin Juice (Printer-Friendly Version)

# What You'll Need:

→ Pumpkin Mixture

01 - 1 (15-ounce) can pumpkin puree (about 1 3/4 cups)
02 - 120 ml water (1/2 cup)
03 - 134 grams granulated sugar (2/3 cup)
04 - 1 1/2 teaspoons pumpkin pie spice

→ Juice Blend

05 - 960 ml apple juice (4 cups)
06 - 1/2 teaspoon vanilla extract

# Steps to Follow:

01 - Combine pumpkin puree, water, sugar, and pumpkin pie spice in a medium saucepan. Cook over medium-low heat, stirring frequently, for 10 minutes. Remove from heat and let cool.
02 - Line a fine mesh strainer with 2-3 layers of cheesecloth, allowing extra overhang. Place the strainer over a bowl or measuring cup to collect the liquid.
03 - Transfer about one-quarter to one-third of the cooled pumpkin mixture into the cheesecloth-lined strainer. Stir and press gently with a metal spoon to extract liquid. Alternatively, carefully squeeze the cheesecloth to release translucent liquid without forcing out pulp. Discard remaining solids. Repeat with remaining pumpkin mixture until you collect approximately 355 ml (1 1/2 cups) of liquid.
04 - Rinse and dry the saucepan. Return strained pumpkin liquid to the pan, add apple juice and vanilla extract. Simmer over low heat until the mixture reduces to the original 4 cups volume, about 10 minutes.
05 - Pour the juice into a storage container and allow to cool to room temperature. Refrigerate and serve chilled over ice, or warm as desired.
