Preheat the oven to 375°F. Line a baking sheet with parchment paper.

In a skillet, combine diced apples, brown sugar, cinnamon, flour, and lemon juice. Cook over medium heat until apples soften, about 5 to 7 minutes. Remove from heat and let cool.

Roll out the pie crusts if needed, then cut into approximately 3 by 4 inch rectangles.

Place spoonfuls of cooled apple filling onto half of the rectangles, leaving edges clear. Brush borders with beaten egg. Cover with remaining rectangles and press edges to seal using a fork. Poke several holes in the top crust to allow steam to escape.

Brush tops with the remaining egg wash. Bake in the preheated oven for 20 to 25 minutes until golden brown.

Allow pop tarts to cool slightly. Mix powdered sugar with milk and optional cinnamon or caramel, then drizzle glaze over the pastries.
