Gently peel the peaches and slice into even 1/4-inch thick pieces. Place the slices on a paper towel to absorb excess juice.

Spread a generous layer of ricotta cheese onto one side of each bread slice, covering the surface evenly.

Arrange peach slices over the ricotta on two bread slices. Drizzle 1 tablespoon of honey evenly over the peaches. Layer the white cheddar slices on the remaining bread slices.

Close each sandwich, aligning the ricotta and cheddar sides. Press gently to secure. Spread a thin, even layer of softened butter over the outside of each sandwich slice.

Heat a skillet or panini press over medium-low. Place sandwiches buttered side down in the pan. Cover loosely to assist melting. Grill for 4–5 minutes per side, adjusting the heat to prevent over-browning, until bread is golden and cheese is melted.

Remove the top bread slices after grilling. Add optional bacon, basil, or balsamic glaze. Replace the top slice, press lightly, and serve immediately while warm.
