Arrange bread slices on a parchment-lined baking sheet. Brush one side of each slice evenly with olive oil.

Sprinkle grated Parmesan cheese over the oil-brushed side of each bread slice. Bake for 8 to 10 minutes until edges are golden and crisp.

Remove garlic Parmesan toasts from the oven. Spoon the marinated tomato mixture atop each slice. Drizzle a little olive oil over the top and serve immediately.
