01 - 1 cup unsalted butter, softened
02 - 2/3 cup powdered sugar, sifted
03 - 2 1/4 cups all-purpose flour, spooned and leveled

05 - 1 teaspoon mint or peppermint extract
06 - Green gel food coloring, added dropwise to desired shade
07 - 3/4 cup mini chocolate chips

# Steps to Follow:

01 - Line a baking sheet with parchment paper.
02 - Beat softened butter and sifted powdered sugar until light and fluffy in a mixing bowl.
03 - Add flour, salt, and mint extract; mix until just combined.
04 - Blend in green gel food coloring one drop at a time until desired color is reached.
05 - Gently fold mini chocolate chips into the dough.
06 - Scoop approximately 1 tablespoon of dough and roll into balls; place on the prepared baking sheet.
07 - Cover the dough balls and refrigerate for a minimum of 30 minutes.
08 - Preheat the oven to 375°F (190°C).
09 - Bake chilled dough balls for 7 to 8 minutes, until the bottoms are just lightly golden.
10 - Cool the cookies on the baking sheet for 5 minutes.
11 - Transfer cookies to a parchment-lined tray dusted with powdered sugar and dust the tops generously.
