Beat softened butter and sifted powdered sugar until light and fluffy in a mixing bowl.

Add flour, salt, and mint extract; mix until just combined.

Blend in green gel food coloring one drop at a time until desired color is reached.

Gently fold mini chocolate chips into the dough.

Scoop approximately 1 tablespoon of dough and roll into balls; place on the prepared baking sheet.

Cover the dough balls and refrigerate for a minimum of 30 minutes.

Preheat the oven to 375°F (190°C).

Bake chilled dough balls for 7 to 8 minutes, until the bottoms are just lightly golden.

Cool the cookies on the baking sheet for 5 minutes.

Transfer cookies to a parchment-lined tray dusted with powdered sugar and dust the tops generously.
