Pour wet ingredients into dry mixture and stir gently until just combined; do not overmix. Fold in green gel food coloring until uniform in color.

Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil.

Pour 1/4 cup batter per pancake onto the hot surface. Cook 2-3 minutes until bubbles appear and edges set, then flip and cook an additional 1-2 minutes until golden and cooked through. Keep warm while cooking remaining pancakes.

Place two pancakes per serving plate. Position two marshmallows atop each for eyes, securing with a dab of chocolate syrup. Press a blueberry into each marshmallow for pupils. Arrange two banana slices below eyes for cheeks and draw smiles with chocolate syrup. Drizzle maple syrup as desired.
