Combine chopped pears, apple cider, honey, cinnamon stick, and cloves in a small saucepan. Bring to a boil over medium-high heat, then reduce to a gentle simmer and cook for 12 to 15 minutes until pears soften and liquid is reduced by half.

Remove and discard the cinnamon stick and cloves. Transfer the mixture to a blender or use an immersion blender to purée until smooth and silky. Allow to cool to room temperature.

Add salt, Dijon mustard, apple cider vinegar, and black pepper to the cooled purée. Blend or whisk until thoroughly combined.

Slowly drizzle in olive oil while whisking continuously or blend to emulsify until the dressing is creamy and stable. Adjust seasoning with salt, pepper, or vinegar if necessary.

Use immediately or refrigerate in a sealed container for up to five days. Shake or whisk before use as natural separation may occur.
