Spiced Pear Apple Cider Dressing (Printer-Friendly Version)

A warm, spiced blend of pears and apple cider that adds autumn charm to salads and dishes.

# What You'll Need:

→ Fruits

01 - 2 ripe pears, peeled, cored, and chopped

→ Liquids

02 - 1 cup apple cider
03 - 2 tablespoons apple cider vinegar
04 - ⅓ cup olive oil

→ Sweeteners

05 - 1 tablespoon honey

→ Spices

06 - 1 cinnamon stick
07 - 2 whole cloves
08 - ½ teaspoon salt
09 - ½ teaspoon Dijon mustard
10 - Freshly ground black pepper, to taste

# Steps to Follow:

01 - Combine chopped pears, apple cider, honey, cinnamon stick, and cloves in a small saucepan. Bring to a boil over medium-high heat, then reduce to a gentle simmer and cook for 12 to 15 minutes until pears soften and liquid is reduced by half.
02 - Remove and discard the cinnamon stick and cloves. Transfer the mixture to a blender or use an immersion blender to purée until smooth and silky. Allow to cool to room temperature.
03 - Add salt, Dijon mustard, apple cider vinegar, and black pepper to the cooled purée. Blend or whisk until thoroughly combined.
04 - Slowly drizzle in olive oil while whisking continuously or blend to emulsify until the dressing is creamy and stable. Adjust seasoning with salt, pepper, or vinegar if necessary.
05 - Use immediately or refrigerate in a sealed container for up to five days. Shake or whisk before use as natural separation may occur.

# Additional Tips:

01 - For a finer texture, strain the dressing through a fine mesh sieve after blending.
02 - Ensure the purée is fully cooled before adding olive oil to prevent separation.
