Bring a large pot of water to a boil. Add udon noodles and cook for 3 to 5 minutes according to package instructions. Drain and rinse under cold water to halt cooking. Set aside.

Chop vegetables, shrimp, and mince garlic ensuring all components are ready before stir-frying.

Heat 1 tablespoon vegetable oil in a large wok or skillet over medium-high heat until hot but not smoking.

Add shrimp to the hot pan and cook for 2 to 3 minutes until they turn pink and opaque. Remove shrimp and set aside.

If needed, add remaining tablespoon of vegetable oil. Add garlic, bell peppers, carrots, and broccoli to the pan. Stir-fry for 3 to 4 minutes until vegetables are tender-crisp.

Return noodles and shrimp to the pan. Pour in soy sauce, oyster sauce, and sesame oil. Toss thoroughly to ensure noodles are evenly coated.

Stir in chopped green onions, season with salt and pepper to taste, and toss once more. Remove from heat and serve immediately.
