Combine apple juice, brown sugar, and cinnamon stick in a medium saucepan. Simmer over medium heat, stirring continuously until sugar dissolves. Allow to simmer for 5 minutes until slightly thickened. Remove from heat, stir in vanilla extract, and transfer to a jar with a tight-fitting lid.

Fill a shaker with ice, add espresso shots and 2 to 3 tablespoons of apple crisp syrup. Shake vigorously to combine. Pour into a tall glass filled with ice, top with oat milk and sprinkle cinnamon on top before serving.
