Allow all cheeses to reach room temperature, approximately 15 minutes, for optimal melting.

Cook bacon strips in a preheated oven at 400°F (200°C) for 15 to 20 minutes until crisp, then set aside on paper towels to drain.

Preheat a large skillet or griddle over medium-low heat to prepare for assembling sandwiches.

Generously spread softened butter on one side of each brioche slice.

Place bread slices butter-side down onto the skillet. On half of the slices, layer sharp cheddar, Monterey Jack, and Provolone cheeses, followed by two strips of crisp bacon per sandwich. Drizzle ranch dressing over the bacon and cheese. Cover with the remaining bread slices, butter-side up.

Cook sandwiches 3 to 4 minutes on the first side until golden and crisp. Carefully flip and cook an additional 3 to 4 minutes until the second side is golden and cheese is thoroughly melted.

Remove sandwiches from heat and let rest for one minute before cutting diagonally. Serve immediately to enjoy warm, stretchy cheese.
